The first video made for Cooking With Rocky is, of course, Pizzelles.  Among those outside the family, these are probably the cookies that Rocky is most widely known for.  People throw money out for these unsolicited, they’re so good.  Rocky even won a prize for these.

Pizzelles are a recipe that Rocky learned from his mother, using an iron his father made.  Rocky talks about this in the video, explaining what has changed since he was a kid, who taught him how to cook things, and, of course, how to make pizzelles.  He also talks about some of his preferences for making his famous pizzelles, including the manufacturers of the iron and the oils.

This is actually a very easy recipe with only a few ingredients, including flour, eggs, oil, sugar, and vanilla extract.

The video and recipe are for vanilla flavored pizzelles.  You can also halve the vanilla and make up the difference with an oil of another flavor.  This is how Rocky makes pina colada, chocolate, orange, anise, and other flavors of the cookies.

The most time-consuming part was waiting for the mixing.  Fortunately, Rocky livens up the wait by telling stories and making jokes.

When the pizzelles come off the iron, which is VERY HOT, they are floppy.  They need to be placed on a flat surface to cool, otherwise they will be deformed.  However, as Rocky shows in the video, this can be used to your advantage, since you can use them to make something like a pizzelle bowl, which you could eat fruit, ice cream, or gelato out of.  A delicious piece of dishware!

Rocky makes lots of pizzelles at a time, which you can probably see from videos and pictures.  To speed things up, he normally uses two irons.  This works out well, since the cook time is pretty short.  He can take one pair out and pour more batter, then switch to the other iron.  It’s like a production line!
